Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let the meat cool before proceeding to maintain tenderness.

Mushroom Duxelles
Cook the mushrooms until all moisture evaporates to prevent a soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling
Keep the puff pastry cold to maintain flakiness. If it becomes too soft, chill it and score the top lightly without cutting through.

Preheat oven to 400 degrees F. Roll out puff pastry horizontally and slice in half.

Add 1-3 slices of deli ham onto half of the puff pastry layer into 4 quadrants. Be sure to leave a little room on the edges. Add a slice of Swiss cheese on top of ham.

Place 2nd half of puff pastry on top of prepared puff pastry with ham and cheese. Using your finger, press down gently to create 4 quadrants. Cut into 4 rectangles.

Separate the 4 rectangles and use a fork to press edges together. If needed, slightly stretch edges of puff pastry to ensure filling isn't spilling out.

On an aluminum pan with parchment paper, gently place the rectangles onto the pan. Lightly brush the tops of the pastries with egg white. Sprinkle sea salt and thyme onto the tops of the pastries.

Place pastries into oven and bake for 15 minutes. If needed, bake an extra 5 minutes. Let th pastries rest for at least 5 minutes before eating.

To save the breakfast pockets, allow them to cool completely. Gently wrap each rectangle with parchment paper and store in freezer for up to 2 months. To reheat, just simply pop in the microwave for 2 minute intervals or in the air fryer at 300 degrees for 10 minutes or longer if needed. Enjoy!

9 oz deli ham
4 slices swiss cheese
1 tbsp dijon mustard
1 tbsp thyme leaves
sea salt to taste
1 egg white
